Picky eaters!

I love food, but i am super picky and will only eat a handful off different things. But i don't want to pass on this habit to my daughter so here are some tried and tested recipes that are ideal for picky eaters!

Now i have tried making the food fun shapes and even used safe food colouring to turn potatoes pink and blue, but still most days my daughters plate is half full and shes begging for chocolate!

Don't get me wrong, some days, I do give her chicken nuggets (no chips - They're yucky apparently!) and easy to cook frozen food and try and make it that bit healthier by adding some carrots or beans. She will happily eat all this up. I can't help but wish she would eat the freshly cooked healthy food at least a times a week.

Now chicken is a firm favorite on my little girls plate - but there are so many added extras in chicken nuggets, that I'm not even sure how much of it is actually chicken!

A homemade version of this is Annabel Karmel's krispie chicken nuggets, she uses rice krispies as an alternative to batter! If you're wary of the salt, just leave it out.

Now pizza is usually considered a treat at the weekend but in our house, we love pizza bagels! Its a quick easy way to recreate the taste of pizza without all the yucky grease and fat from the takeaway. It might not be massively healthier, but this way you can control the toppings and portion size by using normal or mini sized bagels.

  1. Firstly cut your bagels into halves and put on a baking tray.
  2. Spread pizza sauce or tomato puree all over the bagel.
  3. Add cheese and other preferred toppings
  4. Put in the oven at about 180-200 degrees c for about 10 minutes of until Cheese is starting to brown and crisp
  5. Let cool and enjoy!

Smoothies are a great way to get your fruit and veg intake up. If you little one hates there veg sneak it in a fruit smoothie and they wont even taste it the sweetness from the fruits will mask the veg if you get the balance right. If they don't fancy a drink why not freeze it and make an ice lolly out of it. Also if they aren't a fan of bits you could strain the drink a lot of the goodness will still be in the juice.

Here are our 3 fave recipes!

  1. Strawberries, Blueberries, Mixed Berry Juice, Beetroot, Kale, Mangoes.
  2. Carrot Juice, Mangoes, Bananas.
  3. Apples, Raspberries, Blueberries, Spinach

Now everyone's children are different to i cant promise they will like these recipes, these are just what have worked for us! have fun experimenting with foods until you find what works for you and your family.
Have fun!
